Hot Outta the Oven!

So another one of my passions is cooking.. I love to cook and try new recipes! I definitely couldn't resist sharing a picture of this very colorful dish I prepared tonight for my mom and sister, I just love all the colors! =)

Citrus Tilapia

6 tilapia filets
1/2 yellow onion (diced)
2 Roma tomatoes (diced)
1/2 yellow bell pepper (diced)
1/2 orange bell pepper (diced)
1/2 cup olive oil
3 tablespoons lemon juice
3 tablespoons lime juice
1 tsp lemon zest, lime zest & orange zest
1/4 cup orange juice
1 teaspoon dried thyme
salt and pepper to taste

Combine onion, tomatoes, bell peppers, zest, olive oil, lemon, lime and orange juice in a glass bowl, cover and let marinate 30 minutes in fridge. Preheat oven to 350 degrees. Salt and pepper tilapia filets on both sides. Lay onto baking pan and sprinkle dried thyme over filets. Spoon citrus mixture over each filet. Use all peppers, tomatoes and onions over the filets and set aside leftover citrus and olive oil mixture for later. Bake @ 350 for 20 minutes or until tilapia flakes apart easily with fork. Remove from oven. When ready to serve, spoon over left over citrus mix. Enjoy!
